Coffee beans are selectively harvested. They are processed using three different methods. One method involves allowing the cherries to dry naturally, resulting in more fruity flavors. Another method is washing, where the cherries are separated in water tanks, peeled, and fermented. This method results in a more acidic and cleaner taste. The third method involves peeling the cherries but leaving the sticky layer (mucilage) on the bean before drying.
